HEAVY BREAKFAST

1. STUFFED PARATHA
           Ingredients: Cauliflower - 1 Small
           Ginger - 1/2 tsp grated
           Coriander leaves - 2 tsp
           Vegetable Masala - 1 tsp
           Salt to taste
           Method: - Wash cauliflower, dry and grate it in a plate. Grate ginger too, wash and chop coriander leaves. Take 2 medium size bowl atta, pour water make dough, keep it aside. Now add ginger, coriander leaves, vegetable masala and salt in cauliflower. Make 6 balls, take one ball, roll it on rolling board, dust it with dry flour, apply little ghee or oil, take one spoon filling in the center and spread, close the stuffing, grease the griddle and place the paratha, apply ghee turn the paratha, apply ghee on the top surface and flip it, apply ghee on other side. Press it lightly. roast it on slow flame and eat it with curd or pickle.



2. REDISH PARATHA
            Ingredients: Redish - 1 Big
            Green Chilli - 1
            Coriander leaves - 1 tsp
            Salt to taste 
            Method: - Grate Redish, keep in a plate, add small piece of green chilli, chopped coriander leaves and salt in it. Mix it. Make dough, take one ball roll it, spread it nicely and take one spoon filling keep it in the centre spread and close the stuffing. Grease the griddle and place paratha on it apply ghee on the top and turn it, apply ghee on other side too, press it lightly. Roast it till it becomes
golden brown. Enjoy it hot with pickle of your choice.
          NOTE: Grate Redish only when you want to make parathas.



3. METHI PARATHA (GREEN FENUGREEK)
              Ingredients: Green Methi - 1 small bundle
                                   Wheat Flour - 2 bowl
                                    Red Chilli Powder - to taste
              Method: Take flour in a big bowl. Chopped methi, wash and add to flour along with red chilli, cumin seeds and salt. Mix all Pour water slowly and make a nice dough of it. Make balls, take one roll and spread, apply little ghee on it, fold it again and roll it. Place on the hot griddle and press lightly apply ghee on top turn it and apply ghee on other side too. Roast it eat it hot.



4. SUGAR PARATHA
             Ingredients: Wheat flour - 2 bowl
                                  Sugar - 6-8 tsp
                                  Ghee or Oil - little
                                 Coriander Powder - 1 tsp
            Method: Make dough of wheat flour. Keep aside. Take one ball, roll it big, apply ghee on it and sprinkle sugar, fold it, again apply ghee on it sprinkle sugar and fold it again. Press it softly with your fingers and than dust it with dry flour, roll it with the help of rolling pin and place it on griddle on slow flame, apply ghee and turn it press it lightly on both sides and it is ready to eat.


5. PANEER (CHEESE) PARATHA 
              Ingredients: Wheat Flour - 2 Bowl
                                   Paneer (Cheese) - 100 grms
                                   Green Coriander Leaves - 2 tsp
                                    Green Chilli - 1 Optional
                                    Salt to taste
             Method: Mix Paneer, Coriander leaves and salt together.Make dough by adding water slowly. Now make small balls. Take two balls roll one keep aside, roll second one apply ghee on it place one spoon filling in the center spread it, keep another rolled one on top of it press it lightly, dust it with dry flour, roll it and place it on hot griddle apply ghee on both the sides of paratha. Roast it till golden brown. ENJOY



6. POTATO PARATHA
                  Ingredients: Wheat flour - 2 Bowls
                                       Potatoes - 4-5
                                       Green Chillies - 1
                                       Green Coriender leaves - 2 tsp
                                       Salt to taste
                  Method: Boil potatoes, Peel mash, add green chilli pieces, washed and chopped corriender leaves, and salt in it. Mix well. Pour water slowly in wheat flour and make a nice dough of it. Make 4-5 balls, take one ball, roll it on rolling board keep filling in the center spread it and close the stuffing and press it softly with fingers and roll it. Heat griddle put paratha on slow flame apply ghee, turn it and roast it on both the sides. It is ready to eat.

EASY HOME- MADE BREAKFAST

1. POHA 
           INGREDIENTS. - Thick  Poha (Beaten Rice) -200 grms
                                          Green  Chilli - 1
                                          Small boiled Potato - 1
                                          Cumin Seeds - 1/2 tsp
                                          Groundnut - 20 grms
                                          Curry leaves -    4 -5
                                          Onion - 1  optional
                                         Green coriander leaves - 2 tsp
           METHOD - Clean poha wash it in a strainer under a running tap for few seconds, remove and keep to dry. Cut green chillies and potatoes  into small pieces.Wash curry leaves  and coriander  leaves, Keep for draining. Heat oil in a pan add potatoes pieces and fry till golden brown, now add cumin seeds, groundnuts and curry leaves, saute it for few minutes on a slow flame add poha(soaked and drained) in  it, add turmeric powder, salt and masala to it. Mix it properly cover it on slow flame for 5-7 minutes.Take it in a bowl cut tomatoes place on it and sprinkle green coriander leaves on it. Now it is ready to eat plain or with sauce.




2. BREAD ROLLS 
              INGREDIENT - Bread 6-8 Pieces
                                           Boiled Potatoes - 200 grms
                                           Green Peas - 50 grms    
                                           Green Corriender - 2 tsp
                                           Ginger - Small Piece
                                           Curry Leaves - 4-5
                                           Salt to taste
             METHOD - Boil Potatoes, Peel and mash, add boiled green peas to it, add grated ginger, salt and green coriander to mash potatoes. Keep it aside. Make 6-8 mash potatoe's balls. Take 2 glass of water in a broad utensil. Take one piece of bread dip in water take out and press it slightly using your palms. Take one potato ball and keep it in the center of the bread spread it then add the mash potato ball length wise, roll the bread piece using your hands, roll this stuffed bread in bread crumbs and put it in a already hot oil and fry it till it becomes golden brown. Repeat the same process for all the bread pieces. Eat fresh fried bread rolls with sauce.   
             NOTE: Instead of frying you can bake it in the oven too and on griddle too.



3. BREAD PAKODA
             INGREDIENT - Besan (Gram Flour) - 1 Cup
                                          Bread 4-6 Pieces
                                          Red Chilli Powder - 1/2 tsp
                                          Green Coriander - 1 tsp
                                          Salt to taste
                                          Soda - a pinch
            METHOD - Cut bread - make any shape, take 1 cup besan and add salt, a pinch soda, red chilli powder and coriander in it, add water slowly make batter. Now dip bread pieces one by one in it and fry in hot oil, till golden brown. Eat with sauce or with tea or coffee.


4. BREAD PIZZA
         INGREDIENT - Brown Bread 4-6 Pieces
                                           Suji (Semolina) - 1 cup
                                          Milk - 1 cup
                                          Amul Cream - 3-4 tbsp
                                          Few vegetables - 1 Carrot, 1 Capsicum, French Beans 10-15 pieces
                                          Green Chilli - 2-3 Optional
                                          Green Corriender - 4 tsp
                                          Salt to taste
            METHOD - Put 1 cup of semolina in a broad bowl, add 1 cup milk and fresh cream to it,Mix it and leave it for 1/2 an hour. Cut all the vegetables in small pieces. After 1/2 an hour add the vegetables, green chilli and green corriender leaves, salt in it. Now keep griddle on slow flame. Take bread piece put the mixture on it with spoon. Grease the griddle with oil, keep bread pizza on it, let it bake for some time. Repeat the same process with all the bread pieces. Eat it hot with chutney or sauce. DELICIOUS !!!


    
5. UPMA
          INGREDIENT  - Rawa (Semolina) 1/2 Cup
                                             Oil - 1 tsp
                                             Cumin Seeds - 1/2 tsp
                                             Mustard Seeds - 1/2 tsp
                                             Cashew - 6-8 
                                             Curry Leaves - few
                                            Green Chilli - 1
                                            Heeng - Pinch 
                                            Water - 1 and a half cup
                                           Green coriander leaves - 2 tsp
           METHOD  - Heat 1 tsp oil in pan, add cumin seeds, mustard seeds, cashew, curry leaves,  green chilli and hing and 1/2 tsp of gram pulse in it, keep it on slow flame roast it keep stiring it, and add rawa slowly in pan, stir it continuously till it becomes crispy, pour water mix it and cover it on slow flame. Saute for 2 minutes. It is ready to eat.



6. BESAN - SPREAD
            INGREDIENT  - Besan (Gram Flour) - 2 cups
                                               Vegetables of your choice
                                                Salt to taste
                                                Hing - a pinch
                                                Green Chillies - 2
                                                Green Corriender - 2 tsp   
                METHOD - Make a fine batter of besan (gram flour) add finely cut vegetables in it, green chilli and green coriander in the batter, mix it. Heat griddle on slow flame, take a big deep spoon, grease the griddle and spread the gram flour batter on it and bake it. Put some oil around it. Turn it leave it for sometime and it is ready to eat. You can enjoy this with any chutney, but it goes well with tomato chilli or tomato plain sauce.
                                So make it, eat it and relisn it.


7. INSTANT IDLI
               INGREDIENT  - Suji or Rawa (Samolina) - 500 grms
                                             Dahi  (Curd) - 300 grms
                                             Salt to taste 
                                             Eno - 1 pouch
                                             Oil - 1tsp
              METHOD  - Mix Suji and curd together to made soft idli mix slowly add water, salt and cover it for 15 minutes. Grease idli maker with oil, so that idli does not stick to it, After 15-20 minutes add eno pouch to it and mix it only 8-10 times with spoon. Now batter is ready to make idlis. Fill only 3/4 batter and keep on the flame for 15-20 minutes. It is ready to eat.

CHUTNEYS

Hello friends,
                               Today  I am going to write  about some tasty recipes of Chutneys you can definitely add these in your breakfast, lunch and dinner. So lets start with-

1. CORIANDER AND RAW MANGO CHUTNEY
         Ingredients: Coriander leaves- 1 cup
                             Green chilies -3 to 4 .
                             Small raw mango
                             Onion - optional.
         Method: Wash,drain and chop coriander leaves. Wash and cut green chilies. Cut raw                     mango into small pieces and put everything in a mixi jar, add salt and very little                     water. Grind it to form a paste. Pour in a glass bowl or bottlle. 
         FOR SEASONING -Heat 1 tsp  oil, add 1/2 tsp mustard seeds in it let it splutter and                        then add it to chutney. It's ready to eat. U can store it in fridge for few days.
         FOOD VALUE: It improves digestion. Coriander leaves have vitamin K which helps to                    treat mouth ulcers.



2. MINT CHUTNEY 
     Ingredients: -Mint  -1 cup 
                           Coriander - 1/2 cup 
                          Small  Raw mango 
                         Green Chillies -3 to 4  
                         Salt as per taste
    Method: - Wash, drain, clean mint and coriander leaves. Cut raw mango in small pieces. Cut chilies into small pieces. Put all in and salt and little water in mixi jar and make a paste. Your chutney is ready. 
FOR SEASONING:  Heat 1 tsp oil, add cumin seeds in it let it splutter than add to the chutney. Eat it with your breakfast, lunch or dinner.  
 FOOD VALUE: It has good amount of vitamin D.



3. TOMATOES CHUTNEY
     Ingredients : Tomatoes - 2-4 or as required
                              Chillies - 2-3 
                             Salt as needed
                            Vegetable Masala 1 tsp or Sambhar Powder 1tsp
                            Curry Leaves few
                           Corriender leaves - 1 tsp
                           Mustard Seeds 1tsp
       Method: - Wash and cut tomatoes,(scoop out the seeds of tomatoes) now grind chilies tomatoes, and tamarind together to make a paste. Mix 1 tsp of vegetable masala.
       FOR SEASONING -Heat 1 tsp oil, add mustard seeds, curry leaves and then add tomatoes puree in it and cook for few minutes till the oil separates and then sprinkle the coriander leaves on it. and it is ready.
          FOOD VALUE: It is low in sodium thus good for high blood pressure. Tomatoes are good source of vitamins, rich in calcium, vitamin C and carbohydrate. It has a small amount of vitamin B complex.



4. FRESH COCONUT CHUTNEY
       Ingredients : Coconut 1 cup
                             Coriender 1/2
                             Green Chillies 4-5
                              Salt to taste             
       Method: Wash drain and cut coconut into small pieces. Put all together in a mixi jar, add salt and little water. Grind it to form a paste and take out in a bowl.
      FOR SEASONING: Heat 1 tsp of oil, put 1/2 tsp of mustard seeds in oil when splutter add into the chutney. 
       FOOD VALUE: Coconut is highly nourishing, fattening food. The milk, fresh coconut is valuable food for children. It is very good tonic for health. Coconut oil is used as a hair oil. it is known as a wonder food.



5. GARLIC CHUTNEY
     Ingredients: Garlic Pod 4-5
                              Groundnut - 50grms
                             Red Chilli Powder - 20 grms
                             Salt to taste
             Method: Peel garlic, roast peanuts put both in a mixi jar and with little salt and chilli powder grind it to make a paste add to your chutney is ready to enjoy.
              NOTE: This chutney is amazing, very tasty, It makes a lot of differences to your meal.



6. RAW MANGOES CHUTNEY
           Ingredients : Raw Mangoes - 250 grms
                                 Sugar - 100 grms
                                 Corriender Powder - 1tsp
           Method: Wash and peel raw mangoes, cut into medium size pieces. Keep pressure cooker on low flame, heat 1tsp oil add 1tsp cumin seeds and add 1tsp corriender powder in it. Put raw mangoes pieces in pressure cooker and mix it and add little salt to it and give one whistle to it. Close the gas (Burner) After 5 minute open the pressure cooker and it is done. Take out in a glass or steel bowl, add sugar when it is hot, mix it. Ready to eat
         FOOD VALUE: Green mangoes are rich source of protein which gradually decline. It is sour in taste and valuable source of vitamin C. The ripe mango is rich in Sugar. The leaves of mango are useful in diabetes. Please don't take water immediately after eating the green mango, overall it is good for health.



7. KARONDA (CARRISA CARANDAS)      
              Ingredients:  Karonda - 250 grms
                                     Green Chilli - 100 grms
                                     Corriender Powder - 2 tsp
                                     Salt to taste   
               Method: Wash drain and pet dry karonda cut in to half. Slit green chillies into lenght wise. Heat oil in a pan put coriander powder, cumin seeds and salt to taste and then karonda and green chillies into it. Mix it well Don't add water, just cover it and Keep it on slow flame. Check it time to time when done close the gas.




8. SEEDLESS DATES CHUTNEY
           Ingredients : seedless dates 250 grms
                          jaggery to taste     
                Method: Wash, dry and cut dates into small pieces, grate jaggery, put both in mixi jar add litttle water (if you want punjent then add little red chilli powder in it) and grind it to a paste.
             Food Value: Date is delicious fruit of nutritional value. It is usually taken raw. Date is easily digested and are an effective remedy for weak heart. Dates require great care for selection. Always it is advised to purchase the best variety.
