FOOD FOR CHILDREN

Hi to all,
                I am back again after a short break. This time I want to make children happy so I am giving some special  dishes for them. This will help you plan delicious treats for your children at all times of the day. Healthy food makes your child's body and mind healthier, so your child have more energy to enjoy learning and playing.

PIZZA IN A NON-STICK PAN

For the pizza base

Plain flour(maida)   2 cups
Crumbled fresh yeast  2 tsp
Sugar  1tsp
Salt       1tsp
Oil         1tsp

FOR THE TOPPING

Spring onions 1/2 cup
Sliced mushrooms 1/2 cup
Grated cooking cheese  1 cup
Oil for cooking   1 cup

FOR PIZZA BASE

A. Combine all the ingredients except the oil in a bowl and knead into a sift dough using enough water until it is smooth and elastic.
B.  Add the oil  and knead again.
C. Cover the dough with a wet muslin cloth and allow it to prove till it doubles .
D. Press the dough lightly to remove the air.
E. Divide the dough into 2 equal parts.
F. Roll out each portion into a circle.

HOW TO PROCEED

A. Heat half the oil in a pan  and place a pizza  base on it.
B. Spread half the tomato sauce over the pizza base.
C. Top with half the spring onions,mushrooms and cheese.
D. Cover the pan with a lid and cook on a very slow flame for 10 minutes or  till the base is evenly browned.
E. Repeat with the remaining ingredients to make  another pizza.

TIP-Keep the flame sufficiently low so that the base does not burn while cooking.


TASTY GARLIC BREAD

INGREDIENTS- French bread 1 cut into 1 inch slices
                             Butter   1/2 cup  (softened, grated)
                             Parsely flakes
                             Garlic powder

METHOD- A. Spread both sides of bread with butter.
B. Place, cut side down on a baking sheet.
C. Sprinkle one side with cheese, parsely and garlic powder.
D. Broil 4 inch from the heat until light golden brown.
E. Turn slices and  repeat with other side
         Serve immediately.

BAKED PURIS


INGREDIENTS- Barley (jowar flour)     1/4 Cup
                             Soya flour      1/4  cup
                             Red millet (ragi)             1/4 cup
                             Finely chopped fenugreek  2tsp
                             Sesame seeds     2 tsp
                            Chilly powder    1/4 tsp
                            Termeric powder   1/4 tsp
                            Grated  jaggery  2 tsp (dissolved in tbsp water)
                            Salt to taste

METHOD- A. Mix all the ingredients in a bowl and knead into soft dough using a little water.
B. Divide the dough into 40 equal portion.
C. Roll out into thin puris and prick each puris with a fork.
D. Arrange the puris on a baking tray.
E. Back in pre-heated oven a high for 10 minutes.
F. Cool and store in an air tight container.

MASALA (FRENCH) FRIES


INGREDIENTS- Large potatoes  peeled and cut into fingers  4
                             Chilly powder      1  tsp
                            Cumin seed powder     1 tsp
                             Black salt          1/4 tsp
                            Oil for frying
                            Salt to taste

METHOD- A. Parboil the potatoes in salted water for 5-7 minutes. Drain and keep aside.
B. Mix together the chilli powder,cumin seed powder, black salt and salt in a small bowl. Keep aside.
C. Deep fry the potato fingers in hot oil over a medium flame till they are crisp.
D. Drain on absorbent paper and sprinkle the masala mixture on top serve hot with lemon wedges.
TIP- Use the variety of potatoes with a higher starch content.

CORN AND POTATO FRITTERS

INGREDIENTS- Potato peeled and grated      1 cup
                            Onion grated            1/2 cup
                            Sweet corn kernels boiled      1/2cup
                            Chilly sauce                    3 tbsp
                            Whole wheat flour           1/4 cup
                            Oil for deep frying
                            Salt to taste

METHOD- 1. Squeeze and drain the liquid from the grated  potato and put it in a mixing bowl.
2. Add the remaining ingredients and mix well.
3. Heat oil in a kadhai and drop spoonfuls of the mixture inti it.
4. Deep fry till golden brown. Drain on absorbent paper.
5. Serve hot with a relish of your choice.

TIP-you can also make pattice from this mixture.

PEPPY  PASTA

INGREDIENTS- Cooked pasta      2 cups
                              Mixed boiled vegetables  1/2 cup
                              Milk                       1/2 cup
                              Instant tomato soup powder  5 tbsp

Method- 1. Combine tomato soup powder with 1 cup of water and mix well.
2. Put it into a sauce pan and bring it to a boil.
3. Add the milk and cheese and simmer.
4. Add the cooked pasta and vegetables.
5. Toss well and serve immedietly.
