YOUR MIND N YOU

Hello everyone,
                      If I speak to you well upon a subject you like your mind becomes concentrated upon what I am saying. I draw your mind away from yourself and hold it upon the subject in spite of yourself. Thus our attention is held. Our minds are concentrated upon various things in spite of ourselves. We can not help it.

                      Thought-control in the initial stage does not mean that there will be no thought in the mind at all. A thoughtless state may be a stupid state. In the initial stage thought-control means developing the capacity deliberately to think good thoughts and to desist from thinking bad or wrong ones.

                     We can get perfect control of the mind. We must develop the power of detachment. We should put our minds on things they should not draw our minds to them. We are usually forced to concentrate.

                     To control the mind, to place it just where we want it, requires special training. It can not be done in any other way. In training the mind the first step is to begin with the breathing. Regular breathing puts the body in a harmonious condition and it is there  easier' to reach the mind. The mind acts on the body, and the body in its turn acts upon the mind. They act and react upon each other.
   
                    Now the mind is in one mood the next moment, perhaps, it is different,changing all the time. The purer the mind, the easier is to control. So we should practice disciplines for the purification of the mind. The easiest method of doing this,however,is cultivating holy company. Mind-control is greatly helped by the practice of meditation, and meditation by mind-control. Methodical control of thought is a great secret in controlling the mind.

                   Man is growing in knowledge, in power, in happiness. Continuously, we are growing as a race. There is a continuity of mind. The mind is universal. Your mind, my mind all there little minds, are fragments of that universal mind, little waves in the ocean.

                   Meditation on God is the most effective way of controlling the mind. They both go hand in hand. Unless you meditate, the mind can not be controlled, and unless the mind is controlled, you can not meditate. Those who want to control their minds must not store up ill feelings or grievances or other wrong impulses in the mind, which is used for higher purposes. A time will come when we shall find holy thoughts coming out from within. Control of the conscious mind will not be difficult then.

                     A healthy mind is much easier to control than an unhealthy or broken mind. We shall notice that when our mind is in a disturbed state. Our breathing becomes faster and irregular. One of the ways of quieting the mind is to regularize the breathing.

                    We have to seize this unstable mind and drag it from it wanderings and fix it on one idea. Over and over again this must be done. By power of will we must get hold of the mind and make it stop and reflect upon the glory of God. The easiest way to get hold of the mind is to sit quiet and let it drift where it will for a while.

                    Make no effort to control the thoughts but, watch them and follow them in imagination as they float away. Nothing is more exhausting then wrestling with the mind. The more we are exhausted the more turbulent the mind becomes, and ultimately we are swept away. The mind is susceptible to suggestions. It learns whatever you teach it.

                   Those who believe in God have a distinct advantage over those who do not believe, as far as mind control is concerned. We get potent help for controlling the mind, when faith in God is sincerely cultivated.

                   A pure mind is easily controlled. But the non-believer will have to work at it the hard and long way.Mind control is greatly helped by the practice of meditation and meditation by mind control. We must beware of a harmful kind of imagination by being truly moral only for this moment, and then the next moment for the next moment and so on.

              Believers are at an advantage in controlling the mind. The simplest and surest method of controlling the mind is through love of God. Mind-control is valuable because it leads to the highest blessing-the illumined state of being.
There is no greater blessing in life than a controlled state of mind. Let us do our very best to acquire it, for this will lead us to the greatest of blessings.

HEALTHY TIPS

1. WHENEVER you scrape 'bitter gourd', rub the scrapings all over your face and leave on for a few minutes before washing off your face will be sparkling clean. Done regularly, it will reduce blackheads and pimples significantly.

2. FOR A SORE THROAT Powder peppercorns and basil leaves and dry them in the shade. Use this powder to make black tea.

3. WANT TO GET RID of toothache? Take one teaspoon ginger juice, a little edible camphor, a little honey and a pinch of salt. Heat the mixture for a second and apply it on the aching tooth.You get relief immediately.

4. TO TEST THE PURITY of honey, pour a few drops of honey on blotting paper. If honey gets absorbed, It is adulterated, otherwise it is pure.

5. THE COCONUT OIL will not solidify, especially during winter. If you add a few drops of castor oil to it and shake well.

6. LESS OIL WILL be consumed while deep frying, if you add half a teaspoon of salt to the oil.

7. DON'T THROW AWAY lemon rinds, orange peels and pomegranate skin. Just dry them in the sun and grind to a fine powder. Mix this powder in coconut oil and apply to your hair to prevent hair loss and also to get shining hair.

8. ROAST CARDAMOM till the skin becomes crisp and slightly brown.When cool, grind to a fine powder. This powder is ready for use as and when required. Cardamom skin acts as a preservative, so the powder remains fresh for a year.

9. GRATE POTATOES straight into cold water to prevent them from darkening.

10. POUR HOT VINEGAR over soft vegetables to prepare crunchy pickles.

11. IMPROVE THE flavour of boiled cabbage by adding ginger.

12. TO SET CURD quickly in winter, pour warm milk into a casserole and mix in one teaspoon curd. Close the casserole. You will get nicely set curd in less than two hours.

13. GET MINT, coriander and fenugreek flavour round the year. Buy the herbs while in season. Clean well. Dry in shade and powder. Store in an airtight container in the fridge. Add the powder to get the desired flavour in food when fresh leaves are not available.

14. FENUGREEK SEEDS ground in milk and applied on the face everyday give a glowing complexion.

15. MIX HONEY WITH turmeric powder and apply the paste on burns.The burns will heal quickly.

16. TO GET RELIEF from an earache due to cold, take half a flake of slightly crushed garlic, wrap it firmly in a little cotton wool and place in the outer ear. The pain will be gone after sometime.

17. GET RID OF pimples real fast by applying garlic juice over them.

18. WHILE GRINDING Idli or dosa batter, add some fenugreek seeds along with the black gram lentil. Your idlis and dosas will come out softer and tastier.

19. WHEN IN A HURRY for tamarind pulp, take the required amount of tamarind, pour hot water over it and cover tightly. The pulp will be ready in two minutes.

20. THE JAR OF YOUR mixi leaks while making wet pastes,dry grind the ingredients to a powder instead. Remove and gradually mix in hot water to obtain a smooth paste.

21. DON'T THROW away the water in which rice has been cooked. Add salt to paste, pour into flat plates and dry in the sun.When dry, you get rice papads(papadum). Deep fry the papadum in hot oil. Sprinkle masala (mixture of ground spices) over them before serving.

22. HAVE YOU HEARD of dosas being prepared without black gram lentil(urad dal)? Grind a few fenugreek seeds and the bottom portion of lady fingers(which are usually discarded) along with the rice and make dosas the usual way. They will turn out very crisp.

23. FOR RELIEF FROM COUGH, wrap a flake or two of garlic (with the skin on) in a clean soft  cloth. Cover the garlic and fold the cloth three times. Pound the garlic till the juice comes out. Then tie the cloth around your neck just  before going to bed.

24. IN ORDER TO PREVENT the odour of burnt rice, sprinkle a handful of salt on the floor and place the burnt rice pot on the sprinkled salt till it is time  for lunch or dinner. The burnt smell will be gone by then.

25. TO GET RELIEF from common cold, put some roasted grams in a muslin cloth, tie it and heat lightly on a pan. Keep the tied grams near your nose and inhale deeply. Repeat it.

26. EQUAL QUANTITY of fenugreek seeds and cumin seeds soaked in water overnight, ground to a paste in milk and applied to the scalp before washing removes dandruff and ensure thick hair.

27. IF YOU ARE lean and want to gain weight, eat a handful of roasted gram and drink a glass of hot water daily in the morning. It will work wonders.

28. TO PREPARE CAKE in a hurry, just mix all the ingredients together with a tablespoon of lemon juice and bake. Lemon juice serves as a  substitute for beating the ingredients and thus saves a lot of time.

29. A FINELY CHOPPED ONION with a tablespoon of sugar and a small piece of ginger when mixed in a bowl and left overnight will form a syrup the next morning. This syrup can be used as a very effective cough mixture for children.

30. AFTER SQUEEZING out lemon juice,rub the lemon peels on to your palms and toes. The lemon has a bleaching effect.

31. WHEN TOMATOES TURN soft, soak them overnight in a bowl of water to which a little salt is added. They will become firm the next morning.

32. YELLOWISH STAINS on the teeth will disappear if lemon juice mixed with salt is used as a paste to brush the teeth.

33. IF THE RICE overcooked, don't panic. Just add some cold water and ghee to it and let it stand for a few minutes. Then strain and spread it on a big plate. As it cools and dries, the grains will separate.

34. APPLY A PASTE of ground, roasted almonds mixed with honey on mouth ulcers. They will disappear quickly.

35. BEFORE BREAKING A coconut, hit it all over with a hammer. The coconut will come out clean and easily from the shell.

36. TO GET INSTANT relief from a toothache, apply toothpaste on the affected tooth. The pain will subside in a few seconds.

37. WHILE APPLYING HEENA(mehendi) on the palm, use a disposable syringe. It will make the application much easier and less messy.

38. EAT A CARDAMOM or two especially during long journeys, to avoid feeling thirsty.

39. RUB ICE COLD orange juice on dry skin in circular motions. It gives you a glowing complexion.

40. IF YOU ARE stung by mosquitoes, bees or ants,application of toothpaste can relieve the pain and itchiness. It reduces the swelling too.

41. FOR A QUICK and effective face scrub, mix a little wheat flour with semolina and tomato juice, and scrub your face with this paste. Apply it to your face, leave for a few minutes and then wash off.


USEFUL TIPS
                                          
1. TRY THIS FOR instant relief from uneasiness and gas in the stomach: To one cup boiling water add a pinch of black pepper powder,a good pinch of soda bicarb, a pinch of asafoetida and salt to taste. Drink while still hot.

2. TO SHINE your silverware to a glitter, make a paste of gramflour and the juice of half a lemon. Apply it generously to the silverware. Wash off with water after a few minutes.

3. TO REMOVE scratch marks from furniture, make a paste of cigarette ash and cooking oil and rub it in well.

4. YOUR JEANS WILL NOT fade if you wash them with half a bucket of water to which four tablespoons vinegar has been added.

5. REMOVE BALL POINT pen marks from clothes instantly with nail polish remover.

6. YOUR TOOTHBRUSH will be bacteria free of you soak it in hot salt water once in a week.

7. SOILED SHIRT COLLARS will be shining white if you soak them in cold water for a while and apply sugar on the area before washing as usual.

8. KEEP TERMITES AWAY from your cupboard by fitting a 40 or 60 watt bulb inside the damp cupboard and leaving it on through the night every day for 15 days.

9. GIVE YOUR FADED black clothes that new look by soaking them in a solution of one teaspoon shikakai powder and one teaspoon reetha powder for atleast two hours.

10. IF YOUR BALL POINT pen refill does not work,just place it in warm water overnight. The next morning, you will see the refill recharged and working.

11. WHEN YOUR SHOE POLISH gets dry, add a few drops of kerosene to it. This will give the shoes an additional shine.

12. RIPE BANANA PEELS are good fertiliser for plants especially roses or potted plants. Chop two peels and plant them into the soil,10 cm away from the stem. Repeat every week.

13. TO GET RID OF oil or burn stains on vessels, add a little rangoli powder to the cleaning powder before scrubbing the vessel.

14. IF YOU ARE often constipated, eat more lady finger vegetable.

15. WHILE CLEANING copper and brass utensils, add two to three tsp.of citruc acid powder to the cleaning powder. The utensils will shine like new.

16. ADD HALF A TSP of salt to your hot bath water to relieve fatigue and bodyache.

17. ADD A TSP OF SALT to two tsp. turmeric powder and boil with a little water to obtain a thick paste. Apply while still hot over sprains.

18. TO REMOISTEN SHOE polish cake which has dried out, place the sealed tin in a shallow bath of boiling water for a few minutes, then mix a little turpentine into the polish.

19. THE ODOUR FROM the toilet can be eliminated instantly, if you light a match stick in the toilet.

20. EATING A LEAF or two of basil(tulsi) takes care of many disorders and works wonders during malaria.

21. WASH FLOOR TILES with a bucket full of water to which one spoon of Robin Blue powder has been added. The floor tiles will be clean and shine like new.

22. TO SHARPEN scissors, nail cutters, blades etc. Cut sand paper with them.

23. TO REMOVE HAIR dye stains from garments, dip the stained portion in water. Remove from water and apply a little warm glycerine. Rub it with a brush and wash well. The stain will disappear.

24. MASH A FEW mint leaves, neem leaves and a banana. Apply the paste all over the face and neck, avoiding the eyes. Wash off when dry. This face pack removes scars, freckless and minor skin blemishes.

25. DIP COTTON WOOL in olive oil and rub your pearl jewellery with it. The pearls will regain their brightness.

LIP SMACKING TREATS

South Indian food is very popular, it is no longer a favourite of the south Indian alone, it is equally popular and appreciated all over. These recipes are great and delicious in taste, easy to prepare. So come everyone, enjoy the treat.

1. SEMOLINA DOSA
             Ingredients :- Semolina(Rawa) -  1cup
                                   Plain flour(maida) -2tsp
                                   Grated coconut    -  2tbsp
                                   Green chillies chopped - 2
                                   Curd                       -  1/2 cup
                                   Cumin  seeds         -  1/2 tsp
                                   Salt  to  taste
                                   Oil for cooking.            
               Method -  1. Mix together semolina, plain flour, curd and 1/2 cup of                                     water to make a batter.
                                2. Keep aside for 20 minutes and cover it.
                                3. Now add the grated coconut, green chillies, cumin                                            seeds, salt and mix it well.
                                4. To make a thin batter, add more water.
                                5. Heat a griddle, and pour 1/2 cup of batter while tilting                                      the griddle to form a thin layer.
                                6. Now, put a little oil on the sides.
                                7. When it is done evenly, fold over into half. Serve hot                                        with your favourite chutney.



2. CORN DOSA
           Ingredients: - Sweet corncobs  - 3 nos
                                 Green coriander -3 tbsp (chopped)
                                 Gram flour(besan) -2tbsp
                                 Green chillies         - 2 (chopped)
                                 Oil                           - for cooking
                                 Salt to taste
            Method: - 1. First grate the corn, then add besan and green chillies,                                      chopped green coriander leaves, salt and water to make                                    a smooth batter of pouring consistency.
                             2. Now, heat the griddle(non-stick) over a low flame and                                      also grease the griddle (tava) with oil.
                             3. Pour batter with the help of a ladle or cup(1/2) on the                                       griddle and tilt the griddle so as to get a thin  layer.
                             4. Cook on both the sides till you get the desired golden                                      brown colour. It is ready to eat with chutney. Serve hot.
             Note - 1. No soaking
                        2. No fermenting, required.
                        3. You can use curd for variation.

3. BEATEN RICE (POHA) IDLI
             Ingredients: - Rice semolina(idli rawa)   -  1cup
                                   Split black gram (urad dal) - 1/4 cup
                                   Beaten rice (jada poha)        - 1/4 cup
                                   Oil for greasing                     
                                   Salt to taste                              
              Method - 1. Idli rawa and beaten rice, wash and soak both for 2                                           hours.
                             2. Now wash black gram and soak it too for 2 hours.
                             3. Blend rice samolina and beaten rice in a blender to                                            make a smooth batter.
                             4. Use little water to grind the black gram separately to a                                      smooth paste.
                             5. Mix both batters and add salt. Now keep aside for at                                        least 8 -9 hours for fermenting.
                             6. Put 1" water in a big pan with a well fitting lid and place                                  on the flame.
                             7. Spoon out the batter into greased idli moulds and steam                                   for 15 minutes.
                             8. Remove idli from the mould after 5 minutes.
                             9. Serve hot with chutney and sambhar.



4. SAMBHAR (sour curry)
               Ingredients: - Split yellow lentil (tuhar dal) -  1cup
                                      Onion  chopped             -      1
                                      Drumstick                         - cut into 4-5 pieces
                                      Tomato                               - 1 chopped
                                      Potato                                  - 1 cut into pieces
                                      Brinjals                               - 1or 2 cubed
                                      Tamarind (imli)                  - 1tbsp pulp
                                      Salt to taste
                                       Sambhar Masala
                                       Asafoetida (hing)      -  1/2 tsp
                                      Red  chillies                - 5-6
                                      Fenugreek seeds        - 1tsp
                                     Whole coriander          -3 tsp
                                     Cumin seeds (jeera)      - 1/2 tsp
                                    Split black gram(urad)  - 3 tsp
                                    Termeric powder            -  1tsp
                  Method: - 1. Wash and cook the yellow lentil, add onion, brinjal,                                          drumstick, tomato, potato and little water (2 cups) to                                         it.
                                   2. Then add salt,sambhar masala( mixture of  ground                                           spices) tamarind pulp to it.
                                   3. Now add 4 to 5 cups of water to it and boil it.
                                   4. Heat the oil, add mustard seeds, asafoetida and                                               curry leaves.
                                   5. Now add this to the sambhar and keep it on slow                                             flame for few minutes. Serve hot.

5. GRAM FLOUR SPREAD
                   Ingredients: -  Gram flour (besan) - 1cup
                                          Green chillies - 2 finely chopped
                                          Green coriander - 2 tbsp
                                          Onions                   -2 chopped
                                          Cumin seeds          - 1/2 tsp
                                          Salt to taste
                                          Oil for cooking
                  Method: - 1. Keep gram flour in a deep vessel, add salt and cumin                                        seeds to it slowly add water, make a fine batter. Mix                                        it properly. Keep aside.
                                   2. Now, heat the griddle(non -stick), grease it keep it                                          on medium flame.
                                   3. Take a ladle, dip in the batter and spread it evenly                                           on the griddle.
                                   4. Sprinkle onion, green chillies and coriander leaves                                             on it. Put some oil around the spread.
                                   5. Bake it on both the sides.
                                   6. Done. serve hot with your favourite chutney.

6. INSTANT SEMOLINA SPREAD
                 Ingredients: - Semolina(rawa)  -   1 cup
                                       Sour curd              -  1 cup
                                       Asafoetida(hing) -  1/2 tsp
                                       Soda bicarb(meetha) - 1/2 tsp
                                       Water                          -3/4 cup
                                       Salt to taste              
           FOR TOPPING: Green chillies  -2 chopped
                                       Onions               -2 chopped (optional)
                                       Tomatoes           - 2 chopped
                                       Green coriander 2 chopped 2tbsp
                                       Salt to taste
                  Method: - 1. Mix all ingredients well. Add water to get pouring                                              consistency.
                                   2. Add soda and keep aside for 30 minutes.
                                   3. Now heat griddle and grease it.
                                   4. Take a deep laddle and pour batter on greased                                                 griddle, spread it.
                                   5. Mix all the topping and sprinkle a little topping on it.                                         Press the topping slightly.
                                   6. Make sure that the underside is nicely cooked.Then                                           turn it.
                                   7. Serve hot with your favourite chutney.

7. WHOLE SMALL POTATO CURRY (DUM POTATO)
                    Ingredients: - Small potatoes   -    10 -15
                                           Curd                      -    1/2 small cup
                                           Cumin seeds        -     1/2 tsp
                                           Coriander seeds  -     2tbsp powdered
                                           Curry leaves         -    3 -4
                                           Bay leaf                  -     1
                                           Asafoetida              -    pinch
                                           Masala                     -  1tsp (ground - spices)
                                           Green coriander leaves - 1tbsp   chopped  
                                           Ginger paste          - 1 small piece grated
                                           Green chilli            -  1 optional
                                           Termeric powder   - less then 1/2tsp 
                                          Oil for cooking
                                          Salt to taste
                     Method: -  1. Wash, dry and peel potatoes.
                                      2. Heat the oil in a pan, put all potatoes in it and fry                                             them till they become golden brown.
                                      3. Take out all and keep on a napkin.
                                     4. Take little oil in a pan, heat the oil put cumin seeds                                           in it then slowly first add onion, saute it add                                                    termeric powder, coriander powder, ginger, salt,                                              asafoetida powder, green chilli and curry leaves in it.
                                     5. Fry for 5 minutes and add curd to it
                                    6. Now mix it properly. After 5 minutes start adding                                            water in it, and boil it on a low flame.
                                    7. Now take potatoes and add them all in the curry.                                             Let it boil for few minutes, add massla and sprinkle                                          chopped green coriander leaves on it. What is a good personality?

                 Do you know the development of one's personality done in the right manner, is a challenging and rewarding task for every individual. And it is rewarding since no effort in this direction goes in vain. In fact, every effort brings success and satisfaction proportionate to the attempt. Since personality development is necessary for success in any field.

                How a person behaves, feels and thinks,how he or she conducts himself in a given set of circumstances is largely determined by the state of his mind. Only the external appearance or a person's speech or mannerisms  are only fringe of one's personality. They do not reflect the real personality.

               We intend to do many things- make resolutions to cultivate good habits, to do something with a concentrated mind. And very often our mind rebels. For instance, a book is open before us, and our eyes are open. But the mind has started wandering, thinking about some past events. So hold your mind and focus.

               Beauty is always linked with personality because even if you are a simple looking person and have a great personality, you can carry yourself with confidence, you are educated, have your own mind than you are, no doubt, definately a winner. Faith in God came next only to faith in God.We are responsible for what we are, and whatever we wish ourselves to be, we have the power to make ourselves. A noble character and developed personality will ensure excellence in one's chosen field. Now, to take a concrete example. A man comes; you know he is very learned, his language is beautiful, and he speaks to you, but he does not make any impression. Another man or woman comes, and he or she  speaks a few words, not well arranged,perhaps, all the same, he makes an immense impression. Many of you have seen that. So it is evident that words alone cannot always produce an impression.

              Words ,even thoughts, contribute only one-third of the influence in making an impression, the man, two-thirds.What you call the personal magnetism of the person-that is what goes out and impresses you. As already remarked, the personality of the man is two-thirds and his intellect, his words, are but one -third. It is the real person(man), the personality of the man,that runs through us.Our actions are but effects.

              We constantly complain that we have no control over our actions, over our thoughts. But how can we have it? If we can get control over the fine movements, if we can get hold of thought at the root,before it has become thought, before it has become action, than it would be possible for us to control the whole.

               Everything that is strong, and good, and powerful in human nature is the outcome of that divinity, and though potential in many, there is no difference between man and man essentially, all being alike divine.

               Manifest the divinity within you, and everything will be harmoniously arranged around it.
If a man thinks good thoughts and does good works, the sum total of these impressions will be good, and they, in a similar manner, will force him to do good even in spite of himself. When a man has done so much good work and thought so many good thoughts that there is an irresistible tendency in him to do good, in spite of himself and even if he wishes to do evil, his mind, will not allow him to do so.

              We are what our thoughts have made us; so take care of what you think.Words are secondary. Thoughts live,they travel far. Each thought we think is tinged with our own character.

              Great work requires great and persistent effort for a long time.The road to the good is the roughest and steepest in the universe. It is a wonder that so many succeed, no wonder that so many fall. The mind, to have non-attachment, must be clear, good, and rational.

               If good prevails, one becomes good; if wickedness, one becomes wicked; if joyfulness one becomes happy. The only remedy for bad habits is counter habits; all the bad habits that have left their impressions are to be controlled by good habits. Go on doing good, thinking holy thoughts continuously; that is the only way to suppress base impressions.

               Do not desire, for what you desire you get, and with it comes terrible bondage. Most of our difficulties in our daily lives come from being unable to hold our minds in this way.

               Fight on bravely!Life is short! Give it up to a great cause. We are responsible for what we are; and whatever we wish ourselves  to be, we have the power to make ourselves. This life is a hard fact; work your way through it boldly, though it may be adamantine; no matter, the soul is stronger. Those that blame others-alas! the number of them is increasing every day. Therefore, stand up, be bold, be strong. Take the whole responsibility on your own shoulders. Resist all evils, mental and physical, and when you have succeeded in resisting, then will calmness come. 

               God  is the only dispenser of results; leave it to Him to do all that. God is in everything. He is already in every work, in every thought, in every feeling. Thus knowing, we must work-this is the only way, there is no other. By doing well the duty which is nearest to us, the duty which is in our hands now, we make ourselves stronger, and improving our strength in this manner step by step.

               If you have a good personality, half the battle is won, people like to be associated with smart  people, whose presense is noticed. It also depends on your behaviour, your confidence, your maturity and the way you speak with others.Whatever you think, that you will be. If you think yourselves weak, weak you will be; if you think yourselves strong, strong you will be. This teaches us not to think ourselves as weak, but as strong, omnipotent, omniscient. You believe in it and it must and will come out.

               Do not expect success in a day or a month. Always hold on to the highest. Be steady. Be faithful to the cause of truth, humanity. Remember it is the person, the life, which is the secret of power........ nothing else. All blessings attend you and all success.

SQUASHES N SHERBET - EASY TO MAKE

TIPS FOR SQUASHES N SHERBETS

 1. Always remember to sterilize bottles, after cleaning the bottles, place them in a big vessel. 
Fill the vessel with water and boil for 15-20 minutes to sterilize. Take out the bottles and dry them.
2. Please do not fill the bottles till the top.
3. Add colour to the squash to give it a good colour.
4. Add little extra sugar, if the fruit you are using is very sour.
5. Preservative should always be dissolved in the hot water and than added for even mixing.
6. Always use the preservative after removing the squash from fire.
7. After filling the squash in the bottles, please close the bottles tightly.
                                                          
SQUASHES

1.  MANGO SQUASH
               Ingredients: - Mango    - 1 kg
                                     Potassium metabisulphite - 1/2 tsp
                                     Sugar     -1.5 kg
                                     Water     - 1.5 kg
                                     Citric acid - 30 grams
               Method - A. Put a pan on medium flame, now add water and sugar in it to make syrup. Add citric acid to it.
                              B. Remove it from fire and also remove the scum from the surface.
                              C. Now, mix potassium metabisulphate in little water(1tsp) and add to the syrup. Let it cool for sometime.
                              D. Now extract pulp from mangoes.
                              E. Add the mango pulp to the syrup when it becomes cool.
                              F. And finally fill in the clean and dry sterilized bottles. Serve chilled.

2. ORANGE SQUASH
                Ingredients: - Orange juice - 3 cups
                                       Sugar             -  1.5kg
                                       Water             -   5 cups
                                       Orange colour - a pinch
                                       Citric acid         -4 tsp
                                       Potassium metabisulphite -1/2 tsp.
Method - A. Squeeze the orange juice. Add potassium metabisulphite immediately, other wise the juice becomes bitter.
               B. Now boil water and sugar together to make sugar syrup.
               C. Add citric acid and boil it for 5 minutes. Remove from fire. Strain it.
               D. Cool the syrup (sugar).
               E. Add orange colour.
               F. Finally add the orange juice to syrup and fill in the washed, cleaned and dry bottles.

3. PHALSA SQUASH
                Ingredients: - Phalsa  -1kg
                                      Citric acid - 3tsp
                                      Sugar    -2.5kg
                                      Sodium benzoate -1/2tsp
                                     Water     - 6 cups
Method - A. Wash and clean phalsa. Boil in 3 cups of water for 10-15 minutes.
               B. Now Squeeze the pulp through a clean strainer or sieve.
               C. Add remaining 3 cups of water to sugar and keep it on fire to boil.
               D. On boiling, add citric acid to it.
               E. Strain or sieve the syrup through muslin cloth, cool it and mix with phalsa juice.
               F. Dissolve soda benzoate in water(1tsp) and add to it.
               G. Now, take washed, cleaned and dry bottles, fill in bottles.

4. LYCHEE SQUASH
                 Ingredients: - Lychee juice -1 litre
                                       Citric acid     - 10 grams
                                       Potassium metabisulphite - 2gram.
                                       Water            -750ml
                                       Sugar            - 1.25kg

Method - A. Wash and peel the fruits and remove seeds from the lychee (litchi).
                B. Now extract juice in a juicer and strain it.
                C. Heat water, add sugar and citric acid and boil it.
                D. Remove from fire, sieve the syrup through a thin cloth to remove scum.
                E. Cool it and mix it properly in the juice.
                F. Add potassium metabisulphite after dissolving it in 1tsp water.
                G. Now Wash, clean and dry bottles, and fill in the squash and cap them tightly. Keep in a dry place.


SHERBET

1. LEMON  SHERBET (SORBET)
                        Ingredients: - Lemon  - 1kg
                                              Sugar    - 600 grams.
Method - A. Fill in clean bottle with sugar.
                B. Squeeze juice from all the lemon.
                C. Add the lemon juice to the sugar in bottle.
                D. Keep this mixture in the sun for 12-15 days and keep shaking the bottle daily.
                E. By keeping the bottle in the sun, the sugar will dissolve. And this squash can last for a year.

2. ALMOND  SHERBET
                   Ingredients: - Almond (Badaam) - 150 grms
                                         Poppy seeds(khus) -60 grms
                                         Citric acid               -  1tsp
                                         Potassium metabisulphite - 3 grm
                                         Green cardamom    - 20( seeds of)
                                         Sugar                    -   2kg
                                          Water                       -1.5 litre
Method - A. Soak almond and poppy seeds separately over night. Keep changing the poppy seeds water after the 1st day.
                B. Now drain water. Grind almond and poppy seeds separately to a fine paste.
                C. Heat water add sugar to make syrup. Add citric acid to it. Remove scum with a spoon or a strainer.
                D. Add poppy seeds and cardmom to syrup. Boil. Remove it from fire sieve through a cloth.
                E. Add almond paste and essence(optional) to the syrup.
                F. Now dissolve potassium metabisulphite in a tsp of hot water. Add to the sherbet and mix well. And fill in clean,dry bottles.

3. SAFFRON CARDAMOM SHERBET
                  Ingredient: - Saffron(kesar)    -2tsp (soak in 1/2 cup water)
                                       Sugar                    - 2kg
                                       Water                   -  1.5 litre
                                       Green cardamom  - powdered seeds of 25-30
                                       Liquid Yellow colour - 5 drops
                                       Potassium metabisulphote -1/2 tsp
Method- A. Soak saffron in 1/2 cup water for 2 hours.
               B. To make syrup, boil  sugar and water together.
               C. When syrup is ready, cool it.
               D. Add cardamom powder,saffron and yellow colour to the cooled syrup.
               E. Now dissolve potassium metabisulphite in a tsp of hot water and mix it with the cooled syrup.
               F. Take Pre washed, clean and dry bottles, fill and cap them tightly.
