CHUTNEYS

Hello friends,
                               Today  I am going to write  about some tasty recipes of Chutneys you can definitely add these in your breakfast, lunch and dinner. So lets start with-

1. CORIANDER AND RAW MANGO CHUTNEY
         Ingredients: Coriander leaves- 1 cup
                             Green chilies -3 to 4 .
                             Small raw mango
                             Onion - optional.
         Method: Wash,drain and chop coriander leaves. Wash and cut green chilies. Cut raw                     mango into small pieces and put everything in a mixi jar, add salt and very little                     water. Grind it to form a paste. Pour in a glass bowl or bottlle. 
         FOR SEASONING -Heat 1 tsp  oil, add 1/2 tsp mustard seeds in it let it splutter and                        then add it to chutney. It's ready to eat. U can store it in fridge for few days.
         FOOD VALUE: It improves digestion. Coriander leaves have vitamin K which helps to                    treat mouth ulcers.



2. MINT CHUTNEY 
     Ingredients: -Mint  -1 cup 
                           Coriander - 1/2 cup 
                          Small  Raw mango 
                         Green Chillies -3 to 4  
                         Salt as per taste
    Method: - Wash, drain, clean mint and coriander leaves. Cut raw mango in small pieces. Cut chilies into small pieces. Put all in and salt and little water in mixi jar and make a paste. Your chutney is ready. 
FOR SEASONING:  Heat 1 tsp oil, add cumin seeds in it let it splutter than add to the chutney. Eat it with your breakfast, lunch or dinner.  
 FOOD VALUE: It has good amount of vitamin D.



3. TOMATOES CHUTNEY
     Ingredients : Tomatoes - 2-4 or as required
                              Chillies - 2-3 
                             Salt as needed
                            Vegetable Masala 1 tsp or Sambhar Powder 1tsp
                            Curry Leaves few
                           Corriender leaves - 1 tsp
                           Mustard Seeds 1tsp
       Method: - Wash and cut tomatoes,(scoop out the seeds of tomatoes) now grind chilies tomatoes, and tamarind together to make a paste. Mix 1 tsp of vegetable masala.
       FOR SEASONING -Heat 1 tsp oil, add mustard seeds, curry leaves and then add tomatoes puree in it and cook for few minutes till the oil separates and then sprinkle the coriander leaves on it. and it is ready.
          FOOD VALUE: It is low in sodium thus good for high blood pressure. Tomatoes are good source of vitamins, rich in calcium, vitamin C and carbohydrate. It has a small amount of vitamin B complex.



4. FRESH COCONUT CHUTNEY
       Ingredients : Coconut 1 cup
                             Coriender 1/2
                             Green Chillies 4-5
                              Salt to taste             
       Method: Wash drain and cut coconut into small pieces. Put all together in a mixi jar, add salt and little water. Grind it to form a paste and take out in a bowl.
      FOR SEASONING: Heat 1 tsp of oil, put 1/2 tsp of mustard seeds in oil when splutter add into the chutney. 
       FOOD VALUE: Coconut is highly nourishing, fattening food. The milk, fresh coconut is valuable food for children. It is very good tonic for health. Coconut oil is used as a hair oil. it is known as a wonder food.



5. GARLIC CHUTNEY
     Ingredients: Garlic Pod 4-5
                              Groundnut - 50grms
                             Red Chilli Powder - 20 grms
                             Salt to taste
             Method: Peel garlic, roast peanuts put both in a mixi jar and with little salt and chilli powder grind it to make a paste add to your chutney is ready to enjoy.
              NOTE: This chutney is amazing, very tasty, It makes a lot of differences to your meal.



6. RAW MANGOES CHUTNEY
           Ingredients : Raw Mangoes - 250 grms
                                 Sugar - 100 grms
                                 Corriender Powder - 1tsp
           Method: Wash and peel raw mangoes, cut into medium size pieces. Keep pressure cooker on low flame, heat 1tsp oil add 1tsp cumin seeds and add 1tsp corriender powder in it. Put raw mangoes pieces in pressure cooker and mix it and add little salt to it and give one whistle to it. Close the gas (Burner) After 5 minute open the pressure cooker and it is done. Take out in a glass or steel bowl, add sugar when it is hot, mix it. Ready to eat
         FOOD VALUE: Green mangoes are rich source of protein which gradually decline. It is sour in taste and valuable source of vitamin C. The ripe mango is rich in Sugar. The leaves of mango are useful in diabetes. Please don't take water immediately after eating the green mango, overall it is good for health.



7. KARONDA (CARRISA CARANDAS)      
              Ingredients:  Karonda - 250 grms
                                     Green Chilli - 100 grms
                                     Corriender Powder - 2 tsp
                                     Salt to taste   
               Method: Wash drain and pet dry karonda cut in to half. Slit green chillies into lenght wise. Heat oil in a pan put coriander powder, cumin seeds and salt to taste and then karonda and green chillies into it. Mix it well Don't add water, just cover it and Keep it on slow flame. Check it time to time when done close the gas.




8. SEEDLESS DATES CHUTNEY
           Ingredients : seedless dates 250 grms
                          jaggery to taste     
                Method: Wash, dry and cut dates into small pieces, grate jaggery, put both in mixi jar add litttle water (if you want punjent then add little red chilli powder in it) and grind it to a paste.
             Food Value: Date is delicious fruit of nutritional value. It is usually taken raw. Date is easily digested and are an effective remedy for weak heart. Dates require great care for selection. Always it is advised to purchase the best variety.
